Cheap/cool places to stay in Hong Kong for 2–3 nights to experience the “real” HK?

Hey! I’m visiting Hong Kong and for the first 2–3 nights I’d like to stay somewhere cheap and simple, but in a really lively/local area where I can experience the intensity of the city.
Basically looking for street food, markets, busy streets, local neighborhoods, late-night life — that dense chaotic HK feeling.
Someone recommended Wontonmeen and it looked pretty much perfect for what I wanted, but unfortunately it’s fully booked for my dates.
Any similar hostels or cheap hotels you guys would recommend? A private room would be ideal, but I’m flexible.
I was looking around Sham Shui Po / Prince Edward / Mong Kok / Yau Ma Tei / Jordan, but I’m totally open to other areas.
After those first 2–3 nights I’ll probably move to a nicer hotel for another 4 nights, so for this part I care much more about location, atmosphere and experiencing HK than comfort.
Where would you stay? Specific hostel/hotel names would be awesome.
