Rin Tohsaka: Canonically bisexual. Her attraction to both men (Shirou) and women (Saber) is explicitly stated by her in the original visual novel text and fully realized in the Unlimited Blade Works "Sunny Day" ending.
Gilgamesh: Canonically bisexual/pansexual. He flat-out states that a true hero does not care about male or female, pursues both men and women across multiple games (Fate/hollow ataraxia, Fate/Extra CCC), and his deepest bond is with the non-binary Enkidu.
