I’m looking for some advice before we commit to structural changes, as I feel like I’ve reached the point where I’m too close to the project.

the layout is awkward enough that every option seems to involve a compromise.

The kitchen itself is fairly generous, but it doesn’t feel generous because the utility interrupts one side of the room, there are multiple door openings, and there isn’t much uninterrupted worktop. The existing counter run used to be a chimney breast so it’s even more recessed away from direct sunlight.

The utility window above the sink doesn’t get much sunlight and the view is an ugly brick wall in the yard…about 50cm away. We’ve considered blocking that up and getting a skylight. The immediate rear is also an elevated platform with drain works.

On top of this, the only window in the kitchen is really low so would need adjusting up for counter space.

We’re already speaking to a structural engineer and have free consultations with a kitchen company and architect, but before I influence them with my own ideas I’d love to hear what people who have tackled similar terraces would do.

Our priorities are:
getting more light and flow (only one direct window in kitchen and that’s at the end). The utility/scullerh has two windows, one where the back door used to be, but not much sunlight through these as surrounded by tall terraces (considering skylight as pitched valley roof)
uninterrupted prep space (delulu)
tall pantry/storage
keeping a separate utility if possible - thinking crittall doors in the existing double empty architrave
a sociable kitchen (I’d love a peninsula if it can work)
good resale value

If this were your project, what would you do before spending money on structural alterations? I’d really appreciate any plans, photos or examples of similar layouts that you’ve come across.
