New to the game
Fairly new to smoking. Today was actually the second time for me. I went with 2 inch pork chops. I know a lot of ppl smoke then sear, and a lot sear then smoke. I went with searing then smoking. It seemed to lock in the juices really nice while I was smoking. Was very pleased with the end result.
