Beginning My Outdoor Kitchen Journey - thoughts?

I’m in the early stages of designing an outdoor kitchen. It will be a 15 foot countertop on one side of my patio. TBH more of a grill setup than a kitchen. Right now I am leaning toward doing a built-in griddle (looking at Blaze 30”) plus a built-in kamado Joe series 2. (I had a Traeger for five years and loved it, but they don’t make a good built-in option, and I want to venture into charcoal cooking.) I have a 24” beverage fridge but no other appliances picked out. I am not sure if I should include a sink.

What are ya’lls thoughts on this? Is the sink a must have? Is a griddle + kamado combo the way to go? Anything else I should consider? Will have plenty of storage, outlets, etc.

Timberline Worth It?

I’m redoing my patio area and contemplating putting in a Traeger. I’ve had an Ironwood for about five years and love it. I use it for all my grilling, but its inability to sear has been its biggest downside. The timberline solves that with the induction stove top, and also works well as a “built in” in a patio area. Any reason not to go this route?

Another option is to get a built in propane grill and a separate smoker, like a green egg. But I don’t really want to spend all that money because I’ll probably not use the smoker that much, and I really do prefer the taste of wood-smoked burgers, chicken, hot dogs, veggies etc. over propane.

Wife and I (mid 30s) are planning a quick weekend getaway without the kids.

Looking to fly from Westchester to Florida for two or three nights.

Priorities are quality property, food, pools/beach.

Trying to cap the per night spend at about $1500.

We’ve narrowed it down to the above but are definitely open to other areas and properties, provided it’s an easy flight from NYC (ideally Westchester).
