“authentic ube” sourced in Indonesia… the Philippines not mentioned once

European supplier marketing ube to food manufacturers across Europe. Sourced and processed in Indonesia. The Philippines is not mentioned once.

Nothing against Indonesia growing purple yam. But the flavor they’re selling, the whole category, was and is continually built by Filipinos. And we’re watching the value get captured by everyone except Filipino farmers.

Where does this end up in 5 years if nothing changes?

A very artificial ube donut 😭

Quite disappointed with the ube donut from dunkin donuts, honestly mostly purple food coloring.

Wish that the big companies can do the ube trend justice in the future

Made my own at home ube powder!

Steamed sliced ube, and then dehydrated at 70C for around 3 and a bit hours. Ground finely and then passed through a fine sieve.

Pretty small yield though but just wanted to try lang

Steaming some ube to prep for Halaya

ok the smell in my kitchen right now is unreal

steaming these til they’re soft enough to mash, then it’s halaya time. gonna be stirring that pan for what feels like an hour but whatever, worth it

this ube mochi actually has real ube in it (with a few caveats)

“Ube Mochi” from the local Asian supermarket. Flipped it over expecting nothing and was actually pleasantly surprised — the filling is 25.76% ube paste, and the paste does list purple yam powder as the first ingredient.

That’s more than most “ube” products on the shelf. A lot of them are just taro or sweet potato with a Filipino name slapped on the front

However, the purple on the outside of the mochi is black carrot powder and beetroot red (E162), not ube.

The front of the box is doing a lot. 紫芋 in Chinese means “purple taro” and in Japanese usually means murasaki imo, which is purple sweet potato. Mochi Khoai Tía is Vietnamese for purple sweet potato.

No wonder people still mix up ube, taro, and purple sweet potato when one box uses all three.

It was my birthday the other day and of course just like I do every year I made an ube cake with the fam 💜

This year we made two versions!
