Gluten free bagels!

Took the plunge and was very happily surprised at how easy (and delicious) the GF sourdough bagel recipe from Goyoaga’s book is. Overnight proofing in the fridge, and fresh bagels by 10am!

I followed Goyoaga’s recipe (2.5hr room temperature proof) with a slightly different sourdough starter*, and WOW. A bit dense/hearty, but texture is amazing, taste is nutty and wonderful, and the bread toasts up nicely.

*Brown rice - oat flour
