Hey all. Are there any Mexican restaurants around Denver (and going out as far as Boulder) that sell pollo bandido? It’s a classic Tex-Mex meal out east. It’s strips of grilled chicken covered in queso, usually served with rice, beans, and tortillas. I’ve been craving it and can’t find it anywhere :(
