What is the best way to teach an intro to poly clay class?

First time ever poster here!! I've been doing clay for several years--done the craft show circuit, local shops, etc. Now I want to create an in-person class, but I'm not sure what the final take-home product should be. I want to keep it simple, but still give the students something cool to take home. I'd like to focus on one technique only, to keep it simple. Is faux stone too complicated for a beginner, one-off class?? Is a textured bookmark too easy? What would people want from an in-person class that they can't get from a youtube tutorial? Any ideas from this community would be lovely! xox
