Would you go to a modern, affordable Chinese fast-casual restaurant in Germany?

I’m considering opening a small Chinese fast-casual restaurant in Germany. I’m originally from the Netherlands, have a Chinese background, and grew up with the Cantonese cuisine. I’ve worked for 5/6 years in a Chinese restaurant in Amsterdam.
The concept is simple: a small menu with well-known Chinese/Cantonese dishes, freshly prepared, served quickly and at an affordable price. Instead of having 100+ dishes like many traditional Chinese restaurants. Things like sweet & sour chicken or pork, chicken curry, beef with oyster sauce, fried rice/noodles with different kinds of meat and vegetables. The restaurant itself would be modern, clean and casual.
I’ve noticed that some flavours seem to be popular in Germany, such as slightly sweeter sauces and crispy duck, so I’d definitely want to take local preferences into account.
What do you think would make or break a concept like this in Germany?
