Prague powder ratio ok?

Making this recipe [https://www.jamieoliver.com/recipes/beef/homemade-salt-beef/\](https://www.jamieoliver.com/recipes/beef/homemade-salt-beef/) which has a brine ratio of 2L water, 200g salt, and 30g prague powder #1 to 1.6kg of beef.

I made it with 0.5kg of beef, submerged in the brine for 4 days in the fridge. Afterward I froze it because I was going to be away for a week.

I'm back now and trying to figure out whether it's ok to use a smaller piece of beef in this recipe and whether it resulted in an unhealthy level of nitrites, or does the brine ratio matter more than the meat weight?

Connection timeouts connecting to Cloudfront?

We have customers sharing screenshots with us of Chrome's ERR_CONNECTION_TIMED_OUT page while connecting to a domain cnamed to one of our cloudfront distributions, and I'm at a loss for what could be causing this.

first thought is a problem with the origin, but the cloudfront docs say that if there's a problem with the origin (timeouts, etc), the edge will return 5xx. but these customers are not even connecting to the edge, they're timing out connecting to cloudfront itself.

we can't reproduce and we're trying to get one of these customers to share nslookup / traceroute info, but no luck yet.

in the meantime, has anyone ever seen this before or have a theory about what it might be?
