I have a Cathay Pacific award ticket booked with American Airlines miles from Chennai (MAA) → Hong Kong (HKG), and then a separate United ticket from HKG → San Francisco (SFO).

Time between both flights in HKG is only 2.5 hours. Since the tickets are separate, will Cathay Pacific check my baggage all the way through to SFO or will I need to collect my bags and recheck them with United?

UA - CX has interline agreement and be able to this per UA website, But CX website mentions that they print boarding pass+luggage to final destination only if its one world carrier.
