I only see people doing huge, complex structures, does anyone except me to build like minimalist, small ones?

I want to build a castle where the base doesn't touch the ground, elevated. What's the best option for storing food? Double walls perhaps?

Is there an option in some file or mod, to change to hold position as default or keep the choice until changed by myself?

I always lost guys because I move to a point, when I go see they are outside getting smashed!

This is not so difficult to change I guess, why the devs keep like this?
