Should I take NSW parking fine to court (Hidden sign)

Got stung with an absurd parking fine in an alleyway while visiting Sydney. Didn't see any signage when we drove in and got out of the car. Came back to a $140 fine.

The sign itself if just attached to a telephone pole, mostly covered by a bush. There is a parking sign on the other side of the car, but it's much further down, and is bent so that it's invisible when seen from our car, so any reasonable person standing where our car was wouldn't have seen an obvious sign on the street. We weren't parked in front of any driveways.

I contested it, but they said this despite the photo evidence:

"We acknowledge your concerns regarding the signage at the location, however we are unable to cancel the fine. The issuing officer has noted the signs were clear. You can report obstructed or damaged parking signs via https://www.service.nsw.gov.au/transaction/report-a-parking-sign."

If I took this to court, is there any chance we could get this fine struck down? I'm worried that I'd just have to pay the fine plus a court fee, but it's such an absurd thing to say that this is a clear sign when it's covered by a bush and this is more about fairness than anything...
