What’s the deal with all restaurants opening at 11 or 11:30 on the weekend?

There is no nice sit down brunch that isn’t “diner” style. I wish there was a cafe Luxembourg type place on the east side. Opens at 8:30am during the week at 10am on weekends.

Anyone else feel there is a gap for good weekend breakfast options?
