Is this separation anxiety?

Hi, I'm a house keeper and one of my clients adopted a dog a few months ago. She was abandoned by her previous family and I know she has separation anxiety from that, but it seemed to have gotten better. Her owners are rarely home when I clean and she's usually very chill. She will greet me with excitement and then go lay in one of her many beds. However today she almost bit me when I went to pet her which was very shocking. She greeted me and went to lay in her bed. I went to pet her like I normally do and then all of a sudden she barked and snapped at me. Should I tell the owners? I'm not afraid of her and don't want to make them feel bad. I am worried she might be still suffering a lot of separation anxiety and perhaps they should know. I don't know what to do! Any advice would be helpful.

I've seen it a few times around Central Park and Brooklyn, but have no clue what species. It's so cute and would love to know the name.
