Why is my 1984 300d making this sound?

I've left a picture of my engine bay in the comments. You can hear it start to flutter after 2,200 rpms usually and this started out of the blue. The last thing I did was the valve adjustment, thermostat, and deleted the EGR. I drove it for a week or two and wasn't hearing this until I started it up today. It's got an air filter straight off of the turbo but I've had that on for a while.

Is it normal for my 300d to regularly run this hot?

Bought this car after it sat for 8 years, and it's been around 100° outside every day I've driven it. so far I flushed the cooling system, replaced the thermostat and some hoses but it doesn't seem to have done very much. I've never seen the temperature higher than this, I usually turn on the heater at this point to help the temperature. Around town it does fine, but if I get to freeway speeds the temperature goes up and stays there especially if I'm stopped after high speeds. It was 106° outside when I took the picture and I'm running the heater
