Fall Plants are on Their Way Out

I planted a few things (lettuce, broccoli, onions, potatoes, spinach, cilantro) in the fall for the first time last year. My lettuces did great. Everything else not so much. My broccoli finally sprouted this week, but it's small. I haven't picked the onions yet, but I think they're small too. The spinach looks misshapen, so I'm not sure what happened there.

It was a good learning experience, and I will try again this year. At least, I'll be able to harvest a lot of lettuce if anything.

I transplanted my pincushion flowers yesterday evening, but they're flopping over. Will they correct themselves as they grow? The bigger one seems to be doing better at supporting itself. I read that I was only to fill soil level to the top of the root ball which is what I did, but the plant was pretty much all the way out of the soil so very little was under dirt.
