Planning a trip to GT October 15-19. Is this a bad idea?

Went through some stuff earlier this year and need a breathe of fresh air. To preface I am going on a solo trip and am very active (avid gym/runner) but haven’t really hiked a trail like this before. I really want to hike up the mountain and get some elevation but research has shown that it can get pretty snowy/icy at that time of year. If I could I would hike the whole 42 miles around the loop. I would love to see some fall foliage and snowy peaks and the active wildlife. The cold doesn’t really bother me and I don’t plan on camping / backpacking. I will be staying in Jackson probably at a hotel/motel/hostel. Im flying into Jackson airport, renting a jeep/subaru, getting bear spray/spikes/groceries and basically try to catch a breathtaking sunrise/sunset everyday. I know I should probably choose a different time of year but between work and the kids this is the only weekend I have available for the rest of the year. I’m just concerned about wasting a trip after being so excited about it because of weather conditions. I plan to do horseback riding / guided wild life tour as well. I’m not silly enough to risk my life as a father of young ones but I’d love to hear some opinions of people who have traveled there at this time of year or locals! Thank you for any input and information. I’ve included a list of all the trails I’d like to hit:

Cascade canyon
Lake solitude
Delta lake
Amphitheater lake
Jenny lake loop
Taggart + Bradley lakes
String + Leigh lakes
Hidden falls + inspiration point
Phelps lake loop
Lakeshore trail
Bear paw + trapper lake
Paintbrush canyon
