Specialty Coffee at wedding

Dear redditors, I am looking for a way to make a big batch of good specialty coffee for my wedding. The planning is that after church service we will serve coffee and tea with cake. The church is offering to make the coffee for €1.50 a cup, but if you have any experience with the usual coffee served after service you know this is a no-go if you like good coffee.

I would like to be able to serve the large group of people good coffee (around 200 guests, no idea how many coffee drinkers). Hiring a barista is always an option, but this results in espresso based drinks and is quite expensive. I would love to serve good quality specialty filter coffee and if we could do it ourselves even better.

Do you people have ideas? How long does V60 stay tasty in a thermos for example? Curious to see your response and/or hear of experience with this kind of thing.
