How do I cut off this dudes tail. I've had him near dead like 8 times now. He's not hard to kill but im trying way to hard for his tail weapon

So I killed the first gargoyle and then died but didn't manage to cut off his tail. Do I have another chance to get the tail axe. UPDATE: i got it. Thanks guys

Just bought the game for the first time. Beat the asylum demon. Any tips that aren't technically spoilers? I've already played ds3, demon souls, and elden ring so im pretty familiar with the controls
