Any recommendations for halal alternatives to andouille / tasso that actually taste Cajun? I've tried sujuk and various halal sausages in the US but nothing comes close to the flavor profile of Cajun spices.

My siblings and I want to spend a summer in Amman to learn Arabic. We are the children of Palestinian immigrants. My speaking Arabic (Palestinian urban dialect) is pretty good but I don't have a solid understanding of Fusha or formal grammar. My siblings can understand most conversational Arabic but can't speak at all.
Anyone have recommendations for a university or institution in Amman that can cater to our different skill levels and needs?
