A recent growth spurt has caused some weird problems

I'm currently 15M and have noticed that randomly one day my metabolism increased heavily randomly. At first I was having very bad insomnia, where I would go to sleep at 10pm but wake up at times like 2am-3am feeling stressed and adrenalized. I could fix most of this problem by just eating more at night, which included a simple meal like 2 glasses of milk, honey, cheese, and fruits like cherries and mangoes.

But now for some reason the insomnia has happened again after a week of it being somewhat okay, and these symptoms usually have never appeared before, as my sleep is usually dialed from 10pm to 6am. Could this be some symptoms of puberty and growth spurts?

If so, my environment definitely has not changed a bit. I love being outside, keeping blue light to a minimum 2 hours before bed, reading before bed, eating 2 hours before sleep, and keeping a healthy and active lifestyle.

One thing that has kind of changed and could maybe be a factor in this "insomnia" is my diet. During my sudden height growth, I find myself almost eating 3000-3200 calories a day. For example, a day of eating would include a pound of ground beef, 3 eggs, 0.75 liters of milk, almost 100 g of cheese, multiple cups of both cherries and mangoes, cups of orange juice, coconut water, chicken liver, and carrot salad in between breakfast and lunch. My macros every day are around 1 g of protein per pound of body weight (I'm around 5'9" and 132), 250 g of carbs, and around 120 g of fat. Though I know my fat and carb ratio is definitely not the greatest. I have eaten like this for a long time, and now all of a sudden I have this annoying insomnia. Are there any holistic solutions to this problem? I don't want to rely on things like T3, aspirin, or progesterone.

I usually never have any energy issues and have always felt well rested after sleep.
