Giving away mastered sprites for the next few hours

I’m off today, wife is out of town and my kid is at school. A couple dudes were awesome enough to help me finish my collection last week so I’ve been trying to pay it forward. I’ve helped quite a few here finish theirs up already.

My crawfish etouffee color has been off the last two times I’ve made it and I cannot figure out why.

Vegetables cooked down in butter for thirty minutes. Add flour and make the roux for twenty minutes. Add crawfish and water and cook it for 15-20 more minutes.

It’s always come out amazing but the last two times it’s gotten dark and it changes the flavor. Any guesses as to what could be the issue? Thanks in advance!
