wwyd? neos or caridina given soft tap water?

I'm new to shrimp keeping and am in the process of waiting for my tank develop some biofilm for the lil dudes (tank is cycled. 0ppm ammonia, 0ppm nitrites, 5ppm nitrates).

I'm running into issues though. One, I did plant the tank with fluval stratum, not knowing its mostly targeted towards caridina. On top of this, my tap water on the softer side. Here's my rest results below

Tap water:

6-7 pH

7 GH

2 KH

Tank water (6.6 gal):

0ppm ammonia, 0ppm nitrites, 5ppm nitrates

6-6.5 pH

7 GH

1-2 KH

The original plan was to keep Neocaridina, since I'm knew to shrimp. However, would it be better to keep caridina due to my soft water? I've been in the hobby for about a decade, so I'm not new to water chemistry/liquid tests. Has anyone had experience with super soft tap water? How steep of a learning curve is there with neos versus caridina? Thanks in advance!
