I have never made hot sauce, nor successfully lacto fermented anything

Hi there, first time super hot grower and hot sauce maker. I sort of just threw together what I figured would make a good hot sauce. I guess we'll see...I just poured the brine a few minutes ago.

105g Bishops Crown

65g Jalapeños

20g Chardon Frost

22g Pink 7 Pot

5g Habenero

150g Carrots

200g Red Bell Pep

70g Shallots (it's the only onion-y thing I had. I'll do a sweeter variety next time)

15g Garlic

50g Beets

100g Peach

All I had were sweet pickled beets so I had to do less than I would have liked in order to make sure the vinegar and sugar didn't mess with things too badly. To compensate, I did a 4.6% brine, which I think might end up a bit too salty but oh well. I don't know how it will turn out...it's sort of an experiment. Thinking of calling it Sweet Heat Heresy.

Considering a Hobie Cat 16/18

It would be my first sailboat. Would this be a good option to learn the basics of being on the water? I eventually want to get a bigger keel boat in the future.

My biggest concern is righting the cat on my own. Does anyone have experience with righting these on their own?

I want to buy a sailboat but I dont know how.

I want to buy a sailboat. A cruiser that I can tinker with and learn the ins and outs. Happy to moor at a marina.

Should I just wait for one on FB marketplace? The ones there just seem so shady or poorly kept.

Is it standard to have an inspection done? Does a 27' Catalina 1975 for 2k mean its trash? What about 6k? At what price is the boat "worth it"? Does that make sense? Is an Ericson seen as more reliable than a Catalina by and large?

All of the peppers I bought from Ohio Peppers are just different colored Habs.

I sowed about 30 plants back in Feb and have been working in them since. This is my first year growing hot peppers and im pretty bummed. My Hurt Berries, 7 Pot Pinks, Bismarcks, Chocolate Primos... sigh.

I am brand new

I started three batches of mead 10 days ago with lemon peel added on day one - two 1 gallon and one 1/2 gallon brews. Im using honey that my backyard bees collected for me.

My main question is about yeast. I started my first three brews with Red Stars champagne yeast that comes in the yellow packets. What sort of yeast is that?

I removed the peel today and taste tested and, man, it was bitter and hot. Im sure it'll mellow and settle over the next few months.

What is a good yeast to use? I read that the yeast i used will make it very dry. I love sour beers and read a very old forum thread about Wyeast Belgium Lambic yeast so I ordered that and will start a batch of that soon.

Im really just posting to see what people use as their go-to yeast. Also curious about aging...since mead doesn't age as well as wine from what ive read, what is "the sweet spot"?

What can I do here

This area bakes in the afternoon sun. Are there any fast growing indoor plants that could vine across the top or would they bake too? Im trying to figure out how to cool this space with some plants. Thanks!

I will be placing hives on other peoples property and I wanted to be covered for any sort of liability just in case.

I got a quote through a company called BeeInsure and the insurance is provided by Crum & Forster Specialty Insurance Company.

Just wanted to see if anyone else has insurance and if so, who do you get it through? The quote I got was 2MM general aggregate / 1MM each occurrence. About $500 a year.
