I cant pick a breed :(

I cant decide on what breed to get and i want to be confident before committing to a particular breed

the biggest struggle im having so far is size. im currently in school to become a court reporter but i also have taught basic obedience to dogs in training classes so i have a fair bit of experience between many breeds.

my previous SD was a supermutt at about 44 pounds which was the perfect size for me and was able to hang out for many hours while working but was still alert to cardiac, blood sugar, and behavioral changes. he really was my unicorn.🥲

my concerns with the fab 3 are the labs and goldens are a bit large for me, the labs and poodles are higher energy. they do have excellent off switches and they are super sound dogs i just worry my job may be to boring for them and they they may be too big for my day to day tasks.

the things i need them to do are cardiac alert, blood sugar alert, and notice and task for behavioral changes.

the other smaller stuff i dont really need need but those are the major ones.

please let me know your thoughts and recommendations, fab 3 or off breed! i know the answer might be super obvious i just get all in my head and cant think straight

What specifically is enough mental stimulation and exercise?

I've been looking what future dog breed (potentially for service work) id like and ive seen that they have crazy high exercise and mental stimulation needs but what does that exactly entail?

context: ive only ever owned shelter dogs (mostly husky, amstaff, gsd mixes) so this would be my first purebred. i would say im pretty active and can do a lot mental stim wise

with my currents for exercise i do bikejoring, canicross, hiking, fetch, and swimming as well as have a treadmill during hot weather when we cant swim

for mental stim, i do puzzles, tracking, trick and obedience- my current sd is retired but if the temperament and personality fit they would have the option of service work as well

im super open to doing more like any sports or hobbies i just dont know how much they need of each and what kind of mental/physical activity is fulfilling
