First Smoke - Needs Advice

Hi all! Smoking my first 9.5 pound Boston Butt that’s bone in.

I’ve read different techniques and ways to do it but not sure the best.

Some say to smoke it at 225 for 11-12 hours. Others say to smoke it hotter for maybe 5 hours.

I’ve got the Series 3 Vertical Pellet Smoker. Once I get my meat ready what does everyone do to get their nice pulled pork?

Should I be doing an overnight smoke or super early morning. I want it ready for noon on the 4th ready to eat.

Any advice would be awesome

I had to share some of my recent loves. I’ve been using all sorts of methods to cook these bad boys.

Dutch Oven - classic
Bread Pan - nice for slicing
Pullman Pan

Overall my recipe is about the same in all these.

120g of starter
325-350g warm water
500g King Arthur bread flour

All the inclusions

Bake covered for 25 minutes at 425 for Dutch oven, then 15-20 lid off

For the Pullman 375 for 35 minutes

For the bread pans 350 for 30 minutes - I put another pan on top for the first 15 then remove and let bake the rest the way.

So far everyone I’ve given these too love the jalapeños and cheddar loaves. My favorite is my double chocolate and espresso loaf. Kids and family like the cinnamon sugar, swirl bread.

No more plain bread… except a half whole wheat half KA flour sandwich bread I made which is amazing. Everyone here should have the hand crank bread slicer. It’s completely worth it!
