Week 32: Recreated - Iced Oatmeal Cookies
These are wayyy better than store-bought! I could see myself making them again and again. They are pretty close to perfect!

These were surprisingly easy & turned out super delicious and fudge-y. I just wish the coffee flavor came through a bit more!

I will take any excuse to make this recipe! These are the BEST cookies.

This is an absolutely perfect summer dessert, and the layers of graham cracker crust made it a fit for this week! Highly, highly recommend this recipe! Might not be photogenic, but it has everything else going for it.
We’ve had a travel-heavy summer, which is a gift, but it’s resulted in me getting behind on bakes. Scones seemed like the quickest way to knock out this week, with an added bonus of making breakfasts easier for the next few days.
These were super speedy! Less than 20 minutes start to finish. I think I incorporated a bit too much flour during shaping, as they ended up slightly dry, but that’s nothing some jam and butter couldn’t fix.

We had these in Lisbon last month, and I’ve been thinking about them ever since! Mine didn’t quite measure up to the perfection we had in Portugal, but they scratched the itch. Lemony brioche and coconut…pretty great combo.
Sally's Baking Addiction is back again with another winner!! SO good. Incredibly tender cake and a great crumb topping!
So delicious! Made before a quick weekend trip & forgot to take pictures of the crumb, but rest assured it is delightful!

I am catching up on the challenge after 2 weeks abroad (honeymoon!), so this isn’t an ambitious GBBO showstopper…but any time I use a piping bag, it feels like a showstopper to me.

Delicious and easy! It has a bread pudding-like texture. Sunk a bit in the middle, but otherwise great!
These were fun to make, and I love that they used active starter! Taste is okay, but really just tastes like a sugar cookie - the oreo flavor barely comes through. I think a chocolate chip cookie base (sans chips, plus oreo chunks) would be better!

I think this is delicious! My husband thinks it tastes like sweat socks. Your mileage may vary.

A rare miss from Sally’s! These tasted gross to me & the texture was abysmal. They can’t all be winners 🤷🏻♀️

The taste and texture are PERFECT. One of my favorite bakes maybe ever. The shape….they’re all supposed to be circles. I clearly need to work on my biscuit cutter technique.
These use maple syrup in place of regular sugar! So, they still have a good amount of sugar, just different sugar, so I decided it counts for this week.
Changes I made: pecans instead of walnuts, added chopped semisweet chocolate to the batter, added 1/2 tsp espresso powder
They’re tasty and fulfill a chocolate craving! But they have a cake-y brownie texture, and I prefer a dense, fudge-y brownie, so I don’t know that I’d make them again unless it was for a friend with dietary restrictions (these are gluten and dairy free).
This recipe is a winner!! It’s all the best parts of a bagel with the convenience of a loaf of bread. 10/10!
