Tried something a bit different this time: I froze the eye of round and shaved it thin like cheesesteak beef. It finished much faster than usual and still came out great.
Kinder's SPG, extra black pepper, and a topcoat of Meat Church Holy Gospel. Using the Goldees brisket method so they'll get held overnight in a turkey roaster wrapped in foil with Wagyu tallow.
I'm a convert, no more wrapped ribs for me. 250F until probe tender. Kinders all-purpose rub + Meat Church Holy Gospel.
Ribs go on sale, neighbor wants some, friend wants some... let's roll.
