I was wondering if there are any fancier restaurant that would serve a vegan or vegetarian set menu?

My partner is coming to visit me and I would love to take him out to eat something great but I'm a pescatarian who eats dairy, eggs and fish, he normally eats a vegan diet but can go vegetarian with dairy and eggs if it's a must.

I could spend 1500-2000 NOK on both of us.
