Help wanted in regards to university after moving to Ireland

Hello! A little background about me before I get on to what I need help with.

I have a BSc in Environmental Science (Applied Environmental Science) from a US University. I have been working for 3 years now in water testing laboratories. I am 25.

So I am planning on moving to Ireland from the US by the end of the year (do not need assistance regarding that). I have been looking into the job market and have been having some difficulties with finding stuff I feel qualified for. Since I have started my process of moving, I have started considering going back to university to get further educated. I would still want to be in the same field and I honestly really enjoy working in a lab. Something else I have considered is looking into getting qualified to teach environmental science related subjects. I have done some research into different universities but I do feel I need to visit a place and see how my degree best translates. I did not do the best in some of my classes (I did very well in my major specific ones) but I do have work experience.
Some classes I took that i did really enjoy other than like lab classes were- Sustainably, Environmental Law and Policy, ArcGIS class, and a few others.

So my questions are:
- What are some majors you might suggest I look into?
- What university would you recommend for such?
- How feasible would you say working and going to university is? Or are there opportunities to work at university?
- I am not sure if there us anything else I should ask so if I missed anything you feel is important please do include it.
