Northern Italy - feedback on itinerary options

Our groups (me, my wife, her brother and his wife) will likely be entering Italy via train from Interlaken, Switzerland on 6 Sep. I'm thinking we will stop in Milan and spend a night there. We will need to end up in Florence as we'll likely be flying back to the US from there on 11 Sep. My question is on what to do between Milan and Florence. My two current options are:
- Spend a night or two in Bologna
- Spend a night in Genoa and see Cinque Terra

Our interests are food (but not wine/alcohol), culture (but not museum heavy), and more local experiences. We usually do a food tour or cooking class in the places we visit.

Let me know if one option is better than the other for us or if you have other suggestions. Thanks in advance.

Note: I know it's not enough time, but we will have been in Europe for a week already and I have to be in Interlaken on 5 Sep for an event so our time in Italy is more limited than we'd prefer. My wife and I have done Venice, Florence, and Rome before. Her brother and wife have never been.
