When should we serve gelato, fairy floss?

We’re getting married in November at an outdoor venue on the South Coast of NSW, and our wedding package includes a gelato bike and fairy floss station for the guests.

So at the moment, our timeline is:
3:30pm: Ceremony
4–5:30pm: Cocktail hour — drinks + 4 canapés pp
5:45pm: Reception dinner — banquet-style + dessert bar + wedding cake
11pm: Guests leave the venue

We’re thinking of having the fairy floss during cocktail hour (we have 6 kids attending so I thought it would be nice to have something fun for them earlier) and then gelato around 7:30–8:30pm.

But now I’m wondering if we should just serve both during cocktail hour instead? We’ll already have a dessert bar and wedding cake after dinner, plus the whole reception is outdoors and it could be pretty chilly by then in November.

What would you do?

I’m currently planning our honeymoon for January 2027 and have run into a bit of a roadblock with accommodation in Uyuni. Wondering if anyone had experiences booking a room with one of the salt hotels.

Our plan is to fly from La Paz to Uyuni on 2 Jan, then start a 3-day salt flats tour from Uyuni to Atacama the next day. The tour already includes one night at Palacio de Sal (on 3 Jan), so I thought it would be nice to stay at the same hotel the night before.

However, when I contacted Palacio de Sal directly, they told me that we can only stay there if we book one of their tours which is significantly more expensive and doesn’t include transport to Atacama (that would be an extra cost). I then asked the tour company we booked with if they could arrange an extra night for us, but Palacio de Sal wouldn’t allow that either. They said the agency can only book the one night that’s part of our tour.

We also looked into Hotel Luna Salada as an alternative, but ran into a similar issue no availability through our tour provider.

Has anyone else experienced this when trying to book the salt hotels in Uyuni? Any tips on how to secure a one-night stay at either Palacio de Sal or Luna Salada directly with the hotel or through an agency?
