veggies galore....

OKAY I have SOOOOO many vegetables from a local farm's CSA share and need help thinking of something to make (a side dish for 10-15 people) for a potluck tonight. I'm low income so don't have a ton of other cooking essentials but here's what I got:

PARSLEY, lots of it, Celery, Onions, Fresh garlic, Broccoli, Squash, Fennel, Cilantro, Scallions

What else I have on hand: chicken breasts, spam, canned beans, pasta & pasta sauces, rice, curry sauces, parmesan and cheddar, eggs, lots of spices/dried herbs, butters/oils/etc.

There's also one small store open near me and I could pick up a few things (i.e. bread, dairy, small basics).
