I've got gray/black stain on my Hatsukokoro Ginrei Gyuto 210mm, is that normal?

I have two tadpoles, one with a lot of color but no front leg yet, and another one that one front leg popped today, but no a lot of color. Is that normal? The one with color is about two weeks older!
