Where do I find the best chicharron con crane? I know Fiesta sells them but they are never super fresh. 😭

My partner and I are going to NM in three weeks, and after planning a wedding for the last few months, we have decided to elope and just do it by ourselves. Too many people with opinions and frankly, too much money that I don't care to spend on one day. Since we are doing a road trip through the state and visiting a lot of cool spots, we are thinking about just doing it there.

Since I am coming from out of state, I am here to ask if anyone has any recommendations or has done something like this recently. It looks fairly simple on Google, but I'm sure some offices are busier than others.
