"Babymoon" in January?

Hey all. My wife and I were planning a (several years late) honeymoon for this winter, get to an all-inclusive resort type thing. We found out last month that my wife is pregnant, which we are ecstatic about, but that threw a bit of a wrench in our "sit at a resort, eat, and drink all day" vacation plan. That said, we'd still like to get away with just the two of us before the baby comes, and her ideal "babymoon" window (20-24 weeks, according to Google) is January. She heard somewhere that drier heat in Arizona is easier to deal with as a pregnant woman than some more humid places, so we're looking at Arizona for this January. I guess I'm just curious what are some recommendations for things to do, places to stay, etc. in or around Phoenix. I feel like everything I've seen online is either a hotel that's $100 a night or $700-$1000+ a night with not much in between. Is there that big of a discrepancy between Airbnb and a small hotel and a "nice" hotel?

I imagine we'll do a lot of "sit and relax by a pool" wherever we end up staying, but we would want to do more than just that too. Obviously have never done the "vacation while pregnant" thing, so I'm not really sure what to aim for and what to avoid. Appreciate any insight y'all can share! Thanks!
