First real plant-based meal after stressful couple of months
Been juggling full time work, grad school, and family members’ health crises, as well as hosting guests from out of town. Was slipping hard into fried food / takeout habits and gaining weight. Today I took time out of my day to make a real lunch - air fried chickpeas, steamed sweet potatoes, and a crunchy cabbage / carrot / apple salad, and feel like a human for the first time in months.
