SSD utilisation in NAS (ugreen 4800 pro)

SSD usage on 4800 pro

Looking for a little advise.. I just ordered the Ugreen Dxp 4800 pro, ive got 2 x 24tb iron wolf drives and 2 x 1TB SSD's ( also bought an extra 8gb of ram to add in), with the SSD's specifically im not sure if i should add them both in as read / write cache (raided) or add one drive as cache and the other to the storage pool.. maybe install apps like plex through docker on the ssd in the storage pool. Would that improve local and remote library load timez?

My primary use is going to be running my plex media server locally but I travel a bit and share it with my family so a bit of remote streaming too.. internet wise I should be good. 1gb line that averages about 150 up and 700-900 down.

Ive only got thr 2 new drives at the moment so it'll be set up in a mirrored raid but ill add more drives later down the line id say, ive about 17tb worth of data on my old pr2100 which ill be trying to figure out how best to transfer.. but no matter what I do thatll take time so I want to get the initial set up of the storage pool done right at the start so I dont have to rebuild the volume later.

Setting up a mac mini as a server with files held on Nas (Wd pr2100) looking for advice

Im currently using a PR2100 as my plex server, its for personal use so I use it locally across the house and sometimes when im travelling.. ive never been able to stream my 4k content outside of the local network, it just glitches no matter the quality setting.. even locally it sometimes buffers which is infuriating. My 1080p stuff works both remotely and locally but its slow remotely, sometimes buffers.. so I want to fix that.

Ive been considering replacing the NAS with sometbing newer, ive had this one for about 10 years now.. but I find alot of the info online confusing as to what I should upgrade to, especially as I see synology no longer accept WD drives.. so ive seen some people using mini pc's to handle plex and the software abd then either DAS or NAS units to hold the files. I guess my question is if I bought a mac mini for example, how would I go about making sure it stayed on all the time and the mac mini did all the processing work and just used the files feom the NAS?

Current set up info:

•The pr2100 has 2 x 20TB WD red NAS drives in it running raid so max usable storage is 20TB, ive about 5 TB space left.

•Internet access is a 1GB line.. on average i get about 700-800 down and 100-115 up.

•Everything is connected via ethernet, including the TV (LG CX) and fire sticks (4k max)
