Apple tree overwhelm

I’m looking to get a small dwarf apple tree for my small garden and am overwhelmed by choice!! I’ve done a lot of research into what will suit my garden and taste (I do lean towards crisp and tart) but would love to hear from experience? I’m in the SE of England 🍎

What mountain is this?

I took this photo on the Col du Ganon (France) today, facing north you can see Fort de Lenlon in the foreground on the left. My partner is convinced it’s the Matterhorn, would we be able to see that from there?
