Why are many pits so nice? (serious question)

I'm genuinely curious. Given that many pits are at best from BYB seeking to make a quick buck, and at worst from downright evil breeders selecting for aggression, why is it that many of them are so darn nice? In my experience fostering dogs, being involved in dog sports, and now having a pit mix of my own, some of the most sociable, friendly, and temperamentally stable dogs I know are pit mixes.

Honestly it's a bit surprising because other breeds are often train wrecks when poorly bred. I'm thinking of poorly bred GSDs and Doodles, for example -- in my area, when a dog of those breeds doesn't lunge and bark at mine when we're out walking, it's a pleasant surprise.

Pit bull bans in the UK: Exemptions?

I'm interested in some jobs in the UK and was beyond pissed off and saddened to learn that pit-type dogs are banned. Not being able to bring my dog, or for him to be in danger once there, would be a complete deal-breaker.

So, I want to understand some specifics to determine if there is any acceptable workaround before I rule out the entire UK.

I understand that determining whether a dog is a "pit" is an appearance-based subjective process based on some government lackey eyeballing the dog. My dog is obviously part pit but does not have all the standard physical traits (pic below). His DNA test said he's 35% APBT, 45% Border Collie, and the rest unknown.

Is there a realistic chance he would NOT be deemed to be a "dangerous dog" type, and if so can I have this assessment done BEFORE moving to the UK, AND get a legally binding document about that decision? I am completely unwilling to take him anywhere where police could seize him for no reason other than appearance. So it seems like the only acceptable solution would be to get such a document in advance so that no one is allowed to seize him in the first place.

And, are the UK police really seizing pit-type dogs who are not behaving dangerously???

Please help. I am so frustrated and disappointed. Just venting, but my dog is so completely sweet and gentle (as are so many pit mixes!!). Everywhere he goes, he makes friends with strangers and gets constant compliments about how friendly, sweet, and well-trained he is. His vet records have a note saying he's "such a lover". It's unfathomable that such a dog is illegal in the UK and in many EU countries.
