I'm Now a Broiler Believer
Homemade white sauce, mozzarella, parmesan. Dough Guy recipe, 72 hour.
Anyway, I've always assumed the broiler would incinerate the top of the pizza before the bottom had time to cook, but man has this changed my mind. I turned the broiler on high right after launching, and I had this delicious white pizza 4.5 minutes later. Without the broiler I need at least 6-7 (heh) minutes. And somehow the bottom is better than anything I've ever done. Still a lot of room for improvement of course. I'd like to improve my shaping to get more consistently thin crust.
