In the first section he talks about Fermented Dairy. At 194s (3:14) Dr Ekberg mentions that he runs his yogurt maker (shows an UYM in the video) for 48-60hrs. This is the first time I've heard him mention long-running fermentation. I have not found another video where he talks about making his own yogurt.
