First ever brisket was a success...complete with poor man's burnt ends.

Got a 14.3lb prime brisket from Costco, but it had a massive deckle. By the time I was done trimming, the brisket was only 7lbs. I had a good amount of meat trimmings that I used to make poor man's burnt ends. While the brisket smoked, I rendered the fat into tallow/liquid gold. Credit to my daughter for the poor man's burnt ends idea.

Umbrella Tree just keeps growing

I love this tree. When I bought it, it was probably three feet tall; and now it's closer to 15 feet. She is going to hit the ceiling eventually. What's the best way to stop the upward growth without killing it? TIA!

Got my replacement! She's a beaut', Clark!

Got my replacement unit yesterday (first one came damaged) and got it assembled. Customer service really is top notch! Ready for burn in!

Subsequent to this pic, I went ahead and burned it in last night. Went to bed at 130AM. 😂

Looking forward to smoking my very first brisket (EVER!) for Father's Day! Wish me luck and feel free to send me any tips or favorite recipes. I've spent the past 30+ years cooking on gas grills and Weber kettles, so I'm a total newb to smoking. Happy to have joined the dark (and smoky) side!

Flagship came damaged...

I was stoked to get smokin this weekend but now I've got a couple of weeks of waiting to get a replacement. They offered me money to keep it and hammer it with a rubber mallet, but there's no way this ever gets back to straight.

Anyone else dealt with a damaged unit?
