
Watermelon as an alternative to floral foam?

Hi, everyone! I'm a hobbyist florist and I'll be having my engagement party in September, for which I'll be designing and making the floral arrangements myself. Most of the designs I'm planning for the guests' tables can be achieved with vases and chicken wire, but for the main food table I was wanting something like the picture, which would require a significant amount ot floral foam. However, for environmental reasons, I'd prefer not to use it. Watermelon came to mind as a possible substitute, as its has a pretty high water content and would likely hold up its shape with the weight of the stems. But I'm unsure as to how it would perform throughout the party, which will last a good 6 or so hours. Has anyone here had success with watermelon or a similar alternative to floral foam for these denser and more structural arrangements? Any suggestions are welcome!
