Week 28: Toppings- Oreo Cupcakes

I made these cupcakes for a local graduation. Oreo cupcake recipe from preppy kitchen with a vanilla French buttercream cream topped with Oreo crumbs and more Oreos. I’ve been really liking the taste of French buttercream- it’s so rich and delicious and I always have left over yolks from using egg whites.

Week 24: Showstopper- Chocolate and Cherry Cake with a Chocolate Mirror Glaze

It was so hot this week so I tried to balance something visually appealing with something that would hold up in this heat. I made a basic chocolate sponge layered with chocolate French buttercream and homemade cherry jam. Chocolate mirror glaze was a fun challenge since I’ve never used gelatin in a recipe. It was a delicious cake and the mirror glaze set very well!

Macaronage taking forever did it seize?

Hello! This is my second time using NYT chocolate macaron recipe and the e second time I’ve experienced this. No matter how much I mix I can’t seem to get proper macaronage. Does anyone have any tips on how to fix this or how to improve?

Week 23: Quick breads - Double Chocolate Zucchini Bread

Great recipe from Sally’s Baking! I thought this would be a good choice since zucchini is in season. Bread was so moist and reminded me of the chocolate chip muffin from Costco. It sucks that it has to bake for so long since it’s so hot out but I will gladly suffer again for this delicious loaf!

Week 22: 48 Hour Challenge: No Knead Crusty White Bread

I used King Arthur’s recipe and it seemed simple enough but I think something was off with my proofing as evidenced by the huge bubbles at the top. I made two loaves one at 48 hour (last 2 pics) and one 7 days (1st 2 pics) in the fridge. The 7 day one had a more sourdough taste, which I preferred, but both came out sort of gummy with uneven holes.

Week 21: With a Hole-NY Knicks Butter Cookies 🏀🏆💙🧡

I was inspired by a TikTok that used knicks colors to make bagels when they won the eastern conference finals. I didn’t have time to make bagels so I thought I would just add some food coloring to Danish butter cookie dough lol.

Week 18: Low Sugar

I made these sesame scallion buns for low sugar. Really oily, but I think I should’ve strained the green onions before hand although that was not what was written in the recipe. It was delicious with chili oil

I have been loving making bread lately and this was my first time shaping bread. I used Claire Saffitz’s recipe from Dessert Person. They could’ve used a bit more proofing, but they still turned out nice and fluffy. It was delicious and not overly sweet making it a great coffee companion!

I was inspired by a local bakery who released a seasonal strawberry basil cookie. I was hesitant to try it, but I loved the combination of the two flavors, as it’s refreshing and tastes like summer! I used KAB’s Linzer recipe and added fresh basil into the dough. I made a homemade jam and lemon curd to have a variety of flavors and they turned out so well!
