ELI5: Hatch Chiles

I'm from Colorado. We have local green chili's similar,(We say better..it's an ongoing debate) In general, buy them already roasted, shoot for "mild" if possible as these can be used in lots of ways as others have pointed out. Pork green chili is our state dish. I can send you a recipe if you're interested. Green Chili cheeseburgers are a staple in both CO & NM. Others have described sweating the roasted chili's & removing the skins. A great salsa is roasting ears of corn, cut the kernels off, chop chili's, chop fire roasted tomatoes from HEB, maybe chop onions fine, mix it up and da da... salsa
