Peptide Newbie Question about COA

Sorry in advance if this is a really basic question but Im trying to get an understanding of what the most important ways to evaluate a source's quality. Im reading a lot about COA which seems to be just a batch quality test, but depending how old it is only tells me the quality of that exact batch at that exact time which.

Is it normal to expect a reputable site to have constantly updated or new COAs? How old of a COA is a red flag for a company or is it more like a health inspection for a restaurant where the snapshot in time is an indicator?

If the report doesn't have endotoxin level s well is that a red flag too?

Appreciate any guidance cause didnt see this question when searching.
