Colombian style arepas con queso?
I love Colombian arepas con queso that use very finely milled masa and completely enclose the fully-melted cheese. El Chuletazo Grill had perfect ones I used to drive across town to eat. Since they closed, I've only been able to find types with coarser masa grinds, cut open, etc, which all lend different textures and moisture content than the type I'm seeking. Pupusas also have lower moisture and a thinner layer of masa than I'm looking for.
I tried La Chiva, Quiero Arepas, Mr Arepa, Arepas House, Arepas CO, Pupusas House, Masa Bros, Arepa Bros, La Tinto, Fuego y Masa, and more without finding them.
Anyone have a lead on a restaurant, food truck, or even a home cook I can buy this style from?
